3 oz yellow tomatoes, sliced ¼ “ thick
3 oz red tomato, sliced ¼” thick
¼ oz basil, whole
¼ oz red onion slices
1 oz mozzarella cheese, diced
¼ oz balsamic reduction
¼ oz black pepper – fresh ground
Method
Alternate the tomatoes, place 2 slices of onion on top and cheese.
Drizzle with balsamic lightly sprinkle pepper over tomatoes. Not on the rim.
Balsamic Reduction
Reduce balsamic vinegar by 2/3 and cool. Drizzle over tomatoes.
