4 cups vegetable stock
2 cups jasmine rice
½ cup cashews
¼ cup fresh chives
¼ cup minced ginger
4 tablespoons olive oil
To taste kosher salt
To taste pepper
Method
In a pan, bring stock to a boil and then add rice. Cook according to directions.
When rice is done, fold in the cashew, chives, minced ginger and olive oil.
