Caramelized Mashed Potatoes Recipe from Garden Grill, Epcot |

Ingredients
1 1/3 lb Yukon Gold potatoes
2 oz butter
4 oz milk
1 oz canola oil
4 oz caramelized shallots
1 oz butter
Kosher salt and white pepper, to taste
Method
Julienne shallots and caramelize in canola oil in skillet. Season with salt and pepper.
Add 2 oz of butter and continue to sauté until golden brown.
Boil potatoes until tender.
Place potatoes in large mixing bowl and mix on low speed until broken up. Add in milk and butter slowly.
Season with salt and pepper to taste. Add in caramelized shallots.
