Ingredients
4 ea. - 8 oz Chicken breasts, marinated
4 Tbsp. Teriyaki mayonnaise
4 Kaiser or sandwich buns
1/3 cup Pineapple relish
Teriyaki Mayonnaise
¼ c Mayonnaise
3 Tbsp Teriyaki
Marinade
¼ cup Soy sauce
½ tsp. onion powder
½ tsp. garlic powder
1 Tbsp. sugar
1 tsp. Jamaican Jerk seasoning
2 drops liquid smoke, optional
¾ cup water
Yield: 1 cup
Pineapple Relish
2 cups Golden Sweet Pineapple, grilled and diced small
1 cup small diced red onion
1 tsp. brown sugar
2 tsp. finely chopped cilantro
Yield: 2 cups
Yield: 4 sandwiches
Method
Grill chicken breasts.
Spread mayonnaise onto bottom half of bun.
Place cooked chicken on bun and top with relish.
Teriyaki Mayonnaise
Combine ingredients and refrigerate.
Marinade
Place all ingredients in a bowl and mix well.
Pineapple Relish
Combine and let set for 1 hour before using.
